These premium ripe dark maroon peppers are picked, cut and sun dried during the day and and wrapped tightly at night to' sweat' to infuse the dried flesh with the remaining moisture of the pepper, until the appearance change to a dark, purplish black color with a mellow heat and a fruity & smoky flavor. Then dried peppers are ground to desired seedless pepper flakes which melds both the skins and seeds into the fruity heat and processed with olive oil and salt to create a smoother texture & a bit more punch of flavor.
