1. Whisk together baking mix, baking powder, and sugar. Add egg, melted butter or oil, milk, and vanilla. Whisk until blended. Allow the batter to sit for 10 minutes, to thicken. 2. Preheat waffle iron. 3. Pour batter onto preheated waffle iron. Gluten-free waffles take longer to bake than conventional waffles. Cook until very little steam is escaping from the iron and waffles release easily.
Baker's Tip: For pancakes, leave out baking powder, and use 3/4 cup milk and 1 tablespoon melted butter or oil.
