Vietnamese (Saigon) cassia cinnamon, is a thick single layer of bark of the cinnamon tree, native to the mountains of Central & Northern Vietnam. It has very high essential oil content of 4%-5% oil, which makes it warmer, spicy and sweetest of all cinnamon without the bitterness.
