Also known as 'True Cinnamon' or 'Mexican Cinnamon' It is less spicy, milder & less sweet than cassia, has more complex, citrusy flavor. The light, intricate flavor of Ceylon cinnamon makes it the cinnamon of choice for dishes which do not have a lot of conflicting flavors competing. Often added to baked goods, pies, stewed fruits, applesauce, custard, ice cream, syrups & desserts Special flavors of English and Mexican sweets comes from Ceylon cinnamon.
BENEFITS: Ceylon cinnamon has a much lower volatile oil content, between 1 and 2%. It has ultra-low coumarin levels. Cassia contains 0.5 percent' coumarin', while Ceylon cinnamon contains only 0.0004 percent, suitable for herbal 'Cinnamon tea' without any Side effect.
SUGGESTED USES: To Make Cinnamon Tea: Add 1 cinnamon stick or 1tsp ground cinnamon to your cup, pour 8oz boiling water, steep 8-10 minutes, strain, add sweeter or milk, Enjoy
