Difference over black chia: White chia seeds are smaller, more delicate and a little easier tochew after hydrated.White chia seeds absorb liquids more slowly than the regular seeds so they take longer longer to thicken.
Suggested Uses: Chia seeds can be eaten raw, have a nice "nutty" flavor. May take up to 1 Tbsp of the dry seeds and add them to drinks/liquid or sprinkle them on food. Ground Chia seeds are used in baked goods including breads, cakes & biscuits. Chia sprouts are used as in salads, sandwiches and other dishes.
